Does anybody have any information about this motherboard or any of the other G35 offerings?

The G35 isn't out yet, but if you need onboard + DX10 (but lol, what would you do with onboard DX10?) then it seems like a good choice when it comes out. Else, I would recommend going with a higher performance chipset like the i965 or 680i

Usually the chipsets with built in onboard video are mostly offered in micro ATX flavors, but sometimes there are full sized ATX boards with onboard video.

G35M? Do you mean G33M-DS2R? If so...it's a really badass motherboard. It even has ICH9R!

It overclocks like woah, priced nicely, plenty of features, it IS a Gigabyte board, and did I mention that it clocks like woah? 400+ FSB on a mATX board is pretty awesome, especially for a media center PC. :)

eVGA 7900GT KO
NEC 3550a DVD-RW

Unless you saw some screen shots of the BIOS, I don't think you can...

To some extent... you can go to the manufacturer webpage and dl the manual. Unfortunately with Gigabyte they like to hide their advanced chipset options. The only way to see those are by pressing ctrl+f1 in the bios. Trust me I have one... I am also looking for another mobo though. I think I'd like to try mATX myself.
