I bet they are spiders, but shouldn't they show up as Linux, since that what most servers are based on?

No. The HTTP headers sent by the browsers can claim any operating system they like. Spiders generally don't report the OS at all since they aren't a browser.

Not only that but you can also report incorrect information such as your IP address. This is what makes DoS (Denial of Service) attacks possible. DoS victims ping a server thousands of times a second with a spoofed IP address. The server must then waste its time waiting for a reply from the non-existent or unexpecting client. Since this wait time is usually 30 seconds, doing this repeatedly locks up the entire server.

DOS isn't even apart of Windows NT based OSes (Win2k, XP, Server 2003..)

Well, if you ever need to place DOS based games, just ask. I can point out a program that allows you to run 'em on XP.
