just be aware that overclocking isnt always guaranteed and your results will vary from set up to set up. the 2140 has an 8x multiplier which is the same as the E6750. its a solid multiplier, however i wouldnt go any lower than 8, unless you plan on doing extreme fsb overclocking. the nice thing about the E2xxx series is they run on a 800mhz fsb which translates to 200mhz quad pumped. you could take said 200mhz and with proper tweaking, reach 400mhz quad pumped (fsb 1600) and run DDR2 800 in spec. i guess what im trying to say is processors with lower fsb's and higher multipliers, are easier to learn overclocking on (in my humble opinion of course )

If I were building this rig, I would pay more for the E6550 then the E2000 series. Cache plays a noticeable role in Intel CPU's (especially for heavy apps like gaming) since they don't have an integrated memory controller as of yet.

For graphics, I'd go with a 512mb HD3850 like this one here: dabs.com - Sapphire Technology Radeon HD 3850 512MB DDR3 PCIE Dual DVI (11121-00-20R)
Thats more then enough card to play at your listed resolution. You also mentioned a multiGPU setup, which the P35 already supports crossfire so you could add another HD3850 later. If you go with two 3850's you can also go with a lower wattage PSU, saving more money that way. Intel chipsets usually support Crossfire, so you could keep the cards when moving to whatever chipset Intel has for Nehalem then upgrade to better ones as you can afford it. With DX10.1 and PCI-E 2.0, thats about as future proof as you can get in the tech industry.

For sound, try playing over integrated first. You may find it does well enough to save some on a sound card, and if not you can get the card later and add it in.

Yeah, you can always overclock your 8800GT to get very close to the G92 8800GTS though and compensate for the missing shaders and texture units.
