Just go with the nVidia 790i board. It supports SLI and is a great performer to boot.

Water cooling... What Storm suggested was very good, but I'd make a few changes...

Pump (More reliable than the DDC 3.2, but slightly less head pressure)
Rad (If you can afford it. It really is the "king of cool", much better than the Swiftech. Sadly, it's out of stock, but is in stock at: Jab Tech)

Tubing: I would recommend Masterkleer, 7/16in. It is smaller than 1/2in. and therefore harder to put onto 1/2in. barbs, but it will insure a watertight seal and no leakage. It's also cheaper than Tygon. Get 10ft.
