Jeez, why didnt you say you were so photoshop intense? If your going to such trouble and meticulous detail for image quality, splurge on the Matrox. If you were just an average photoshopper, a regular card would be fine but with such an investment and setup I say you really could take advantage of the added benefits the Matrox cards do for 2D. It'd be worth the investment with your monitor setups and visual quality I'd say.

Oh, and for the which part, its the GPU. Just like with CPUs, each GPU has a different architecture that performs better for certain things. Nvidia and AMD are geared for 3D games, and media playback, while Matrox is situated for 2D applications and image quality when displaying pictures and similar formats.
