So are the server model of it's desktop equivalent always going to be better? More stable? (the server model is made to be run 24/7 I assume.)

Not always, but as for the workstation models of Opterons (the 1xx series), they overclock better than the Athlon64 X2s.

It hasn't been that long that Intel/AMD have made workstation/server capable processors that are meant to run in a single CPU environment (Opteron 1xx's are single CPU only, Opty 2xx are dual CPU, 4xx are quad CPU) - they've left that market to desktop CPUs. They're the same core - just packaged differently.

My opty 165 is dual core and overclocks to FX60 speed so bang for buck their great.
